Apple Pockets
These have got to be one of the tastiest little pockets of goodness I've gotten to enjoy!
Despite their appearance, these were really easy and quick to prepare. The dough was fabulous to work with, and requires just a 10 minute rise before you fill the pockets.
They are like mini apple pies... awesome. The dough is yeasty, and the apples are sweet -- in my mind, that's a delicious combination.
These make the perfect dessert at holiday time because everyone wants just a little slice of all the desserts. These little guys are only 136 calories!
Apple Pockets - Adapted from Taste of Home
Dough
2 C flour, divided
1/4 C wheat flour
2 1/4 tsp. quick rise yeast (1 pkg)
1 T sugar
1/4 tsp. salt
2/3 C water
1/4 C butter
Filling
4 C tart apples, peeled and sliced
1/3 C sugar
2 T flour
1/2 tsp. cinnamon
Topping
1 T milk
1 T brown sugar
Combine 1 C flour, yeast, salt, and sugar in a large bowl.
Meanwhile, heat the butter and water to 120-130 degrees in a saucepan over medium heat.
Add the melted butter mixture to the flour/yeast bowl, and stir until just moistened.
Then, add in the wheat flour, and remaining white flour until a smooth dough emerges.
Knead on a lightly floured surface for 5-6 minutes.
Cover, and let rise for about 10 minutes. My dough ended up sitting about a half an hour, and that was just fine.
While dough rises, cut apples and combine with sugar, flour and cinnamon.
Cut the dough into 4 quarters.
Roll each quarter into a rectangle.
Cut dough into 4 rectangles.
Place 1/4 C of the apple filling in the center of each rectangle.
Pull the ends up over the filling, pinching in the center to seal.
Place pockets on a greased cookie sheet (or 2).
Set the cookie sheet in a warm spot in your kitchen, and allow the pockets to sit, covered for 30 minutes.
When ready to bake, place the milk in a bowl and brush onto the pockets. You can either dissolve the sugar in the milk or you can sprinkle the sugar onto the pocket.
Bake at 375 for 12-15 minutes until pockets are lightly browned.
Verdict: Smiling Frog Prince.
With apples, these are perfect for fall. But, the possibilities for fillings are endless.... cherry, peach, blueberry, raspberry...!

these look delicious. i just went apple picking and needed more ideas besides the standard pie. i have a mini pie maker (http://www.rkwltd.com/product_info.php?products_id=22570) that i picked up at a yard sale that im gonna use for this. thanks for the recipe!!

ReplyDeleteApple desserts are definitely some of the best things on earth. And you know what they say...an apple a day keeps the doctor away. I maintain that these count for at least two apples. Just because their goodness factor adds some endorphins which also strengthen your immune system. Delicious!

ReplyDeleteI made these tonight! Really fabulous! My dough did not rise well though, so mine are miniature compared to yours. I also cooked for only 10 minutes, so the bottom was firm but the dough was still soft.
ReplyDeleteI just bought a bushel of apples so I may be creating more of your apple recipes. I am so thrilled that I have found your blog. I like that you actually "cook" not just grab a bunch of frozen stuff that is on sale. ha. I dont mind a sale, but I do try to stay away from heavily processed foods. I get tired of seeing recipes where you open a bunch of cans and bags and mix everything together and call it cooking!!
