In the need of a healthy, cheap and easy dish that is also comforting in these months when there is still snow on the ground and grey clouds in the sky?
Then I might recommend a crockpot stuffed pepper soup!
Stuffed Pepper Soup - SnoWhite
3 C diced bell peppers
1 can black beans, rinsed and drained
1 can diced (or stewed) tomatoes, undrained
1 can (15oz) tomato sauce
1 tsp. Italian seasoning
2 C water
1 C cooked brown rice
2 T brown sugar
Combine all ingredients, except rice in a crockpot.
Cover and cook on low for 8 hours, or on high for 4 hours.
Thirty minutes before serving, add the cooked rice.
Serve warm!
Just an FYI... the rice will absorb the liquid so when you go to have leftovers, they will be less soupy, but still excellent.
