Goody-Poody Pancakes



Once upon a time, a mother had 7 hungry children.  The seven hungry children saw the golden pancakes cooking on the griddle and begged for a taste.  



When the pancake heard the hungry cries, the pancake got scared.  It rolled itself right off of the griddle, out the door and onto the street!  The mother ran after the runaway pancake with the spatula still in her hand.  The pancake out rolled the mother, and ran into a man in the street.

"Good day, pancake," said the man, who we shall call Manny Panny,
"you look scrumptious, let me have a taste."

"I have run away from Goody-Poody and her seven hungry children, so I must roll away from you too, Manny Panny," said the pancake as it rolled on and on.  The pancake rolled into a hen.  

"Good day, pancake," said Henny Penny, the hen.  
"You look delicious, let me have a bite."  

"I have run away from Goody-Poody and her seven hungry children, as well as Manny Panny.  I need to run away from you too, Henny Penny."  So the pancake rolled on.  




The runaway pancake rolls into Ducky Lucky, Goosey Poosey, Piggly Wiggly and Cocky Locky before rolling right onto my plate.  

Goody-Poody made a good pancake.  Her children were right to want a bite.   

Goody-Poody Pancakes - The King Family {circa 1989}


1 C all-purpose flour
1 C whole wheat flour
1 tsp. salt
2 tsp. baking soda
2 T brown sugar
3 eggs, separated
2 T butter, melted
2 C milk

Directions:
Sift together flours, salt and baking soda.


In second bowl, mix together egg yolks, brown sugar, melted butter and milk.


Whip the egg whites until light and fluffy.


Combine the flour mixture with the milk mixture and whisk together until moist.


Carefully fold in the whipped fluffy egg whites.



Scoop about 1/4 C of batter onto a hot griddle {about 350 degrees}.


Cook until pancakes are full of little bubbles and nicely browned.


If desired, drop fresh blueberries into the batter while the pancakes are cooking.


Then flip and continue cooking until browned.


YUM!


Serve warm.


The Goody-Poody Pancake recipe comes from a family friend who made these tasty pancakes when we visited their island lake home in the North Woods when we were young.  Of course, there was the a read aloud of The Pancake Boy prior to the consumption of pancakes.  The Runaway Pancake folkstory has a history in many countries, but we are most familiar with the Norwegian version.

  2. These look so fluffy and delicious :) I have never made pancakes for breakfast (shocker i know!) but if i do this will be the recipe i follow definitely, they look irresistibly good!

At first I thought that was marshmallow fluff in the pancakes but then I read it was egg whites. ;) Oh, and by the way...down south we have grocery store called Piggy Wiggly -- your story totally reminded me of that!   11. I loved these - they were so fluffy and they come close to tasting JUST like a recipe I used to get at a local diner when I was little.

  12. These were really good! I didn't have any vanilla so they worked out good! Next time I'll add a little vanilla, but these are the best homemade ones I've made!
    Make sure to follow the directions though because it makes a difference!
