While in Michigan, we grabbed up some fresh, Michigan cherries {for a steal price-wise}! My friend Kim and I decided to use the cherries in our favorite dark chocolate raspberry cake and swap cherries instead.
We baked the dessert in a pie plate – and the boys debated whether it was a cake or a pie; so we compromised to call it a dessert.
Pie. Cake. Dessert. Any way you slice it, it was a hit!
Dark Chocolate Cherry Dessert
Ingredients
- 3 T butter {salted or unsalted}
- 1 C whole wheat flour {preferably white whole wheat}
- 1 tsp. baking powder
- 1/4 tsp. salt {use 1/8 tsp. if you use salted butter}
- 3/4 C milk
- 1/2 tsp. vanilla
- 1/2 C brown sugar, packed
- 2 C cherries, halved and pitted
- ~1/2 C dark chocolate chips
Place the 3 T butter in a pie plate. Set the pie plate into the oven and set the oven to preheat to 350. The butter melts nicely in the preheating oven.
Meanwhile, mix together the flour, baking powder, and salt.
In a second small bowl, mix the milk, vanilla and brown sugar. When brown sugar is somewhat dissolved into the milk mixture, add the wet ingredients to the dry ones. Stirring until a nice batter forms.
Carefully remove the pie plate from the oven so as to not spill any hot, melted butter! Then, pour about 2/3 of the batter into the pie plate. Top with most of the cherries and most of the dark chocolate chips. Reserve just a few of each.
Pour the remaining batter over the top. Sprinkle any remaining chocolate chips and cherries over the top.
Bake at 350 for 30ish minutes until center is set and a toothpick inserted into the center comes out clean.
Allow the dessert to sit for about 10 minutes before slicing and serving.
This dessert is egg free too – so if someone you know is allergic to eggs, this is a great dessert to share.
