Menu Plan Monday - July 18

Today is a very special day... for two reasons:

1) It's my Dad's birthday today {Happy Birthday, Daddy!}


and,

2) I am hosting Menu Plan Monday for Laura, I'm An Organizing Junkie, while she vacations.


I am so honored to host Menu Plan Monday today and must say a big "welcome" to those of you visiting here for the first time.

My husband, affectionately called "Frog Prince", and I have been menu planning since we got married, almost 4 years ago.  Laura's Menu Plan Monday has been a must for me ever since we got married - a great way to keep me accountable to planning {and eating} healthy, from-scratch recipes.  Thanks, Laura, for all that you do!

Each week, I share what we actually ate last week and then share our menu for the coming week.  Last week, we just returned from our summer vacation so our menu was rather simple.  We enjoyed:

with steamed broccoli


Veggie Stir Fry with Brown Rice

Grilled Pizza
{a family favorite!}



with sweet potatoes and corn on the cob


and potato salad



Cookies and Cream Ice Cream




For the coming week, we're planning on grilled and crockpot recipes to beat the heat!

Sunday
D - Grilled Pork Tenderloin {new}, grilled potato fries and green beans {or this salad}
Dessert - Ice Cream Sandwiches {new}

Monday
D - Open-Face BBQ Pork Sandwiches, sauteed snap peas {from our garden!}

Tuesday
B - Granola with dried cherries
D - Crockpot Ziti, No-Kead Fococci Bread {bake in toaster oven} 

Wednesday
D - BBQ with our Bible Study {beer brats, hot dogs, buns, crockpot baked beans, fruit, berry lemonade}

Thursday
D - BLTs or Pesto and Grilled Veggie Sandwiches {new}, carrots

Friday
B - Granola and Yogurt
D - Leftover brats/hot dogs served with macaroni and cauliflower bake {new; bake in toaster oven}

Saturday
B - TBD {Saturday mornings are unplanned!}
D - Balsamic chicken with roasted tomatoes, zucchini and mushroom orzo {new}
Dessert - Lemon Buttermilk Sherbet {new}

Your menu looks great. I need to try your no nut pesto. I have had mixed results making it without nuts, so I need to try your version. I hope you have a great week!

I make pesto with sunflower seeds- does that count as a nut? :-) I enjoyed seeing your "beat the heat" menu, unfortunately we don't have any heat to beat here in Oregon. On the bright side, I can turn my oven on with no worries!

Thanks for having us over! I love the way you do your menu plan post. I'm trying to keep cool over at Celiacs in the House with lots of salads and grilling extras during the cool hours of the day to use for leftovers. I also did a review of Stephanie O'Dea's new Totally Together journal/planner that helps families get organized and includes meal planning tips and templates. Have a great week.
