I love a good Saturday, don’t you?
We picked our first tomato from the garden this week. It’s not really related to Saturdays, other than I can see it on my counter on this Saturday afternoon.
I also prepped and froze some mushrooms last week. Again, not related to Saturday, but I felt like sharing. I’ve never done that before but when I found them at 8 oz. for $1, I stocked up. Yes, you can stockpile fresh & healthy foods. That’s part of the way that we eat healthy while maintaining our budget.
If you’re still in need of zucchini recipes, I’ve highlighted a bunch of them on my Facebook page this week. Tomorrow, bring your zucchini recipes there for a link-up! And, if you absolutely can’t wait until tomorrow, check out these zucchini link parties:
- Zucchini Recipe Roundup at Amy’s Finer Things
- Zucchini Ultimate Recipe Swap at Life as a Mom
Finally, the Fairy Hobmother from Appliances Online stopped by my friend Katie from This Chick Cooks. {As an aside, you MUST check out Katie’s blog… she’s a great cook and she has a fun weekly Wednesday link party too!} Anyway, the Fairy Hobmother goes around and blesses bloggers with gifts, like a $30 Amazon gift card. Want your chance to have the Fairy Hobmother visit you? Just leave a comment on this post for your chance to win a visit.
By the way, that last photo – it’s chocolate chip zucchini cake. Make it. Trust me. And, if you peel the zucchini, no one will ever know there’s a veggie in your dessert.
Looks like you're having a nice Saturday. :) Enjoy the rest of your weekend!
ReplyDeleteI wish we had tons of zucchini down here in Tucson b/c all of the recipes look so yummy!! I might have to buy some to make the cake. :)
ReplyDeleteI can't wait for my first tomato...they are still green and small..but there is one larger one and hopefully with enough sun it will ripen soon. Enjoy your day.
ReplyDeleteThose mushrooms look fantastic. One of my favorite meals is stroganoff just for the fact that it is mushroom overload :)
ReplyDeletei am looking forward to squash/zucchini season.

Chocolate chip zucchini cake sounds so good right now. Cant wait to try it!
ReplyDeleteDon't you love that first ripe tomato? We actually had ours before July 4th! I couldn't believe it. Took forever for the rest to turn red or yellow though. Now I'm waiting on the current green ones to turn so we can have a taco salad. I just can't bring myself to buy tomatoes when I have big green ones on the vine. Wish I could grow zucchini. Maybe next year I'll try again.
ReplyDeleteI am loving the zucchini recipes, my father-in-law keeps giving me more zucchini!
ReplyDeleteThose chocolate chip zucchini cupcakes look so good! I'm going to have to try them.
ReplyDeleteI'll be checking out these zucchini recipes - thanks! And I hope the Fairy Hobmother will stop by my blog! :)
ReplyDeleteI'm enjoying fresh produce from our garden, too. Those mushrooms look fabulous...no one else in my family likes them, so I don't get them very often, but I think I might need to get a package soon!
ReplyDeleteWould love for the Fairy Hobmother to visit my blog! Our Saturday was wonderful since my husband was home after being gone for four days. It is such a blessing to have our family all together around the table!
ReplyDeleteThanks for all the wonderful zucchini recipes! I love slipping in veggies when the kids don't know :)

I recently discovered your blog by suggestions from a friend. My family enjoyed Italian Pork Chops Sunday (a wonderfully tasty home cooked meal!) after a long weekend at the hospital with a sick baby...or it would have been our Saturday meal! Thanks for the inspiration to enjoy cooking again with the menus and healthy, easy meals :)
ReplyDeleteI'm starting to get tomatoes too, isn't it fabulous? I do wish that I had zucchini plants though, those muffins look delicious!
ReplyDeleteJust now getting to read my emails--what a week!
ReplyDeleteI am so loving the zucchini recipes--I have always eaten it just as a veggie--I love the idea of trying it in
