Simple Parmesan Penne with Broccoli

This meal is entirely too simple to taste as good as it does. 

One pot. Veggies and whole wheat pasta together in a simple parmesan herb sauce.

It’s filling all by itself, but would accompany a delicious piece of grilled chicken too.

Simple Parmesan Penne with Broccoli – Finding Joy in My Kitchen

Ingredients

  • 8oz whole wheat penne pasta
  • 14 oz. fresh or frozen broccoli florets
  • 1 tsp. dried parsley
  • 4 garlic cloves, minced {fresh or dried}
  • 1/8 C half and half
  • 1/4 C Parmesan cheese
  • salt and pepper, to taste

Directions

Bring pasta to a boil in a large stockpot, following the directions on the package.  During the last five minutes of cooking, toss in the broccoli.  When broccoli is tender and pasta is done to your liking, drain. 

Place the pasta back in the stockpot.  Pour in the 1/8 C half and half, along with the parsley and garlic.  Stir to coat the pasta and broccoli with the spices and creamy  mixture. 

Pour in the Parmesan cheese, and again, stir to coat. 

Season with salt and pepper, to taste.
