Baked Potato Pizza

Last week my parents went out to dinner and told me of a great pizza they enjoyed.



The waitress described the pizza to them as “a baked potato exploding on your pizza!”



That seemed easy enough to replicate. 



And, not to mention delicious!



Baked Potato Pizza – Inspired by Pizza Luce
Ingredients
  • 1/2 recipe of our favorite pizza crust
  • 2 medium baked potatoes, peels on if desired
  • splash or two of milk
  • 1 T sour cream
  • 1 tsp. chives
  • 2 garlic cloves, minced
  • 1 C cheese – mixture of cheddar and Monterrey Jack (or Mozzarella)
  • 1-2 handfuls of spinach
  • 1/2 C broccoli, chopped
  • 6 oz. mushrooms, sliced
  • 1/2 medium red bell pepper, diced
  • 4 strips of bacon, crumbled
  • **Optional: Ranch dressing, tomatoes, corn, to taste
Directions
Begin by preparing the pizza crust according to directions.  Shape the dough into a medium-large circle, and then place on a lightly greased cookie sheet. 

Mash up the baked potatoes with milk until fairly smooth.  Alternatively, you can mash the potatoes to get them really smooth. 



Add in chives, 2 garlic cloves, 1/8 C cheddar cheese and sour cream.  Stir until well combined. 



Spread the mashed potato goodness over the pizza crust with a spatula. 



Top with your desired potato toppings.  We opted for spinach, mushrooms, red bell pepper, and broccoli. 



Sprinkle the cheese over the top. 



Bake at 425 for 15-20 minutes until cheese is nice and bubbly.  Remove the pizza from the oven and sprinkle on the bacon crumbles.  Bake another 1-2 minutes until bacon is warm.



Slice, serve & enjoy!
