The waitress described the pizza to them as “a baked potato exploding on your pizza!”
That seemed easy enough to replicate.
And, not to mention delicious!
Baked Potato Pizza – Inspired by Pizza Luce
Ingredients
- 1/2 recipe of our favorite pizza crust
- 2 medium baked potatoes, peels on if desired
- splash or two of milk
- 1 T sour cream
- 1 tsp. chives
- 2 garlic cloves, minced
- 1 C cheese – mixture of cheddar and Monterrey Jack (or Mozzarella)
- 1-2 handfuls of spinach
- 1/2 C broccoli, chopped
- 6 oz. mushrooms, sliced
- 1/2 medium red bell pepper, diced
- 4 strips of bacon, crumbled
- **Optional: Ranch dressing, tomatoes, corn, to taste
Begin by preparing the pizza crust according to directions. Shape the dough into a medium-large circle, and then place on a lightly greased cookie sheet.
Mash up the baked potatoes with milk until fairly smooth. Alternatively, you can mash the potatoes to get them really smooth.
Add in chives, 2 garlic cloves, 1/8 C cheddar cheese and sour cream. Stir until well combined.
Spread the mashed potato goodness over the pizza crust with a spatula.
Top with your desired potato toppings. We opted for spinach, mushrooms, red bell pepper, and broccoli.
Sprinkle the cheese over the top.
Bake at 425 for 15-20 minutes until cheese is nice and bubbly. Remove the pizza from the oven and sprinkle on the bacon crumbles. Bake another 1-2 minutes until bacon is warm.
Slice, serve & enjoy!
