S’more Ice Cream

There’s something about warm weather that reminds me of campfires.. and campfires remind me of s’mores.   This week, it got quite warm & humid here – too warm for our favorite toasted marshmallow s’more bars.

Rather than roast a s’more over an open fire, we tossed the s’more goodness into our ice cream. 

This is a new favorite.

S’more Ice Cream

Ingredients

  • 1 recipe vanilla ice cream {either this one, or this one recommended}
  • 4 graham crackers, crushed into coarse pieces
  • 1/2 C chocolate chips, chopped {if desired}*
  • 1/2 C mini marshmallows

Directions

Prepare ice cream according to the manufacturers directions associated with your ice cream maker.  If you don’t have an ice cream maker, get your favorite vanilla ice cream and then allow it to get soft enough that you can stir in ingredients. 

In a medium bowl, combine the chocolate chips, graham cracker pieces and mini marshmallows.  Toss. 

Stir the s’more goodness into the ice cream. 

Freeze until hard (2-4 hours). 

Enjoy!

*Note: You may alternatively use a Hershey’s chocolate bar, and chop that into coarse pieces.  We can’t, due to allergies, and found that the chocolate chips – esp. dark chocolate – were perfect.

  3. Please forgive me if I am duplicating information. I have a Cuisanart and love it. I have found that if I lightly spray oil into the container before I add the ice cream ingredients, the contents don't stick so badly in the mixer. Hope it works for you. I tried just rubbing oil into the inside but that drains and makes a "bump" so the dasher doesn't run smoothly. Thanks for your consistenly good recipes!

  4. Sounds like a great treat! We'll have to try it this summer. We like to make s'mores with our fire pit in the back yard - but when it gets really hot out, and the mosquitoes are thick, it's no fun. This is a wonderful alternative!
