One of our favorite summer lunches is a simple wrap filled with spicy BBQ pork. We make the pork in the crockpot, and then use the leftovers all week for lunch. Yum.
Shredded BBQ Pork Wraps
Ingredients
- White whole wheat tortillas
- Crockpot BBQ pork, shredded
- Cheese – we love white cheddar
- Extra BBQ sauce {we love cherry BBQ & regular}
Directions
Start by arranging cheese over the tortilla. You can use slices or shredded.
Next, top with pulled pork and additional BBQ sauce, if desired. Be sure the BBQ pork is warmed first before adding it to the tortilla.
Wrap up the tortilla.
Warm for 30 seconds in a microwave, if desired.
Serve warm.
Hmm.. I think I'm missing out.. I still don't have a crockpot, even with all the hype. I think I will get one soon, this looks great!
