Crockpot BBQ Pork Sandwiches
1 pork loin (or roast)
1/2 C beef broth
2 garlic cloves, minced
1/2 onion, chopped
Your favorite BBQ sauce {we love cherry!}
Whole wheat rolls
Place porkloin in the crockpot and season with minced garlic, and onion. Pour beef broth over the pork and cover. Cook on high for 4-6 hours, or on low for 7-8 hours until the internal temp of the pork is done.
Remove pork from the crockpot, and allow to cool for just a few minutes (or you'll burn those little fingers!). Meanwhile, remove the broth/onions, from the crockpot.
Using two forks, shred the pork. This should be easy since the pork should just fall right apart.
Return the pork to the crockpot and add your favorite BBQ sauce -- we love Famous Dave's Rich and Sassy, Brownwood Farms Cherry BBQ or our homemade cherry BBQ sauce. Stir to coat the pork, adding enough BBQ sauce to cover all the pork.
Cover the crockpot and cook on low for anywhere from 20 minutes to 2+ hours ... or until dinner is ready :)
Serve atop homemade 40-minute whole wheat rolls!
Enjoy leftovers as open-faced cheesy BBQ sandwiches...
