Today is my mom’s birthday. It also happens to be the first day of spring.
To celebrate, I am sharing with you a new favorite waffle – 100% whole wheat goodness with some dark chocolate cocoa powder thrown in for good measure!
On the last waffle or two I tossed in some dark chocolate chips – oh my, what a treat.

Dark Chocolate Whole Wheat Waffles - Adapted from 100 Days of Real Food
Ingredients
- 2 eggs
- 1 3/4 C milk (may use up to 1 C buttermilk)
- 1 T olive oil
- 1 T honey
- 1 tsp. vanilla
- 1 1/2 C white whole wheat flour
- 4 T dark chocolate cocoa powder
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- pinch of salt
- Dark chocolate chips
- Berry sauce
Directions
In a large bowl, whisk together 1 1/2 C white whole wheat flour, 4 T dark chocolate cocoa powder, 2 tsp. baking powder, 1/4 tsp. baking soda and a pinch of salt.
Then, add 2 eggs, 1 3/4 C milk, 1 T olive oil, 1 T honey and 1 tsp. vanilla. Mix well.
Whisk together the wet and dry ingredients.
Scoop, using a ladle, the proper amount of batter into a waffle maker according to your manufacturers directions.
Cook until done.
Serve warm with berry sauce.

These look scrumptious! However, in the past year I have noticed that I am reacting to whole wheat:( Boo...Just bought some coconut flour, we'll see how that works.
ReplyDeleteThese look wonderful! May I ask what type of waffle maker you use? Your waffles look absolutely perfect!! I bought a not-too-cheap Food Network brand from Kohls and my waffles still turn out looking like science experiments. ;-)
