These waffles are naturally gluten free, and the base is made the night before. This makes prep in the morning a breeze.

Overnight Oatmeal Waffles
Ingredients
- 2 C Old Fashioned Oats (use GF if desired)
- 2 C milk
- 1 egg
- 1/8 tsp. salt
- 1 T honey (or 2 T brown sugar)
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
- 3/4 tsp. cinnamon
- 1/2 tsp. vanilla
- 1 T olive oil
Directions
Combine 2 C old fashioned oats with 2 C milk. Using a blender, blend the oats together with the milk. The immersion blender worked well for me, 1 C of oats and milk at a time.
Cover and refrigerate the oats and milk overnight.
In the morning, add in 1 egg, 1/8 tsp. salt, 2 T brown sugar (or 1 T honey), 1 tsp. baking powder, 1/2 tsp. nutmeg, 3/4 tsp. cinnamon and 1/2 tsp. vanilla. Whisk in 1 T olive oil.
Using a ladle, fill your waffle maker according to directions. Cook at a lower temperature for a longer time period, as these waffles will be pretty dense.
When waffles are lightly browned and cooked through, remove from the waffle maker.
Serve with maple apple sauté or berry sauce.
