Thanks for a great turn out for the Ingredient Spotlight featuring oats last week! We had some great recipes – peanut butter oatmeal snacks, meatloaf muffins, and chocolate oatmeal granola bars are just a few of the yummy recipes shared last week.
This week is the carrot! We’ve grown carrots the last two year, heirloom varieties, and have enjoyed the purple, white, yellow and orange carrot! Carrots are a tasty & healthy veggie:

- Great source of beta-carotene
- Low in calories
- Good source of fiber

Carrots are a great pairing with tomato because they cut the acidity! We mix carrots into our tomato-based dishes regularly.
