Menu Plan–June 15

This last week, we started in on a project in our basement.  Currently, our basement is half finished, and we wanted to lighten up the unfinished part by doing a little painting.  I enticed my parents (who are quite handy) to come and help by providing food in return.  Basement Part 1-001

We have more work to go, but it looks soooo good already!  I am so thankful for the help of my parents, especially my dad, who gave of his Father’s Day weekend to help.  Such a testament to his character, servant heart and for that I am so appreciative. 

We tried quite a few new recipes last week, and I hope to post a few this week.  We also enjoyed old favorites, like homemade granola!

And, I can’t seem to get enough of this raspberry rhubarb jam! It is amazing on top of yogurt, ice cream, waffles, and a fresh slice of wheat buttermilk bread.  Yum. 

On to the menu for this week --

Sunday
Simple Pasta Salad {new}, leftover crockpot pork

Monday
Spinach & Mushroom Quesadillas
To do: Make buns, make rhubarb crisp

Tuesday
Chicken Pesto Sandwiches
To do: Make pesto

Wednesday
Leftovers
To do: Thaw chicken, dice peppers, make wild rice

Thursday
Balsamic Crusted Chicken with Wild Rice Pepper Salad
To do: Thaw ground turkey/beef, dice veggies for Sloppy Joes

Friday – Basement Work Day
Lunch: Turkey Sandwiches, Salad
Crockpot Sloppy Joes, Oven Roasted Vegetables

Saturday – Basement Work Day
Crockpot Fajitas {new}, chips & salsa

  1. I love granola too! I have some in bags on top of our fridge that I was trying to find a nice container to better store it in. I looked at Target, Walmart, Kmart and so far everything is the wrong size or shape. But, your containers that you have your granola in are exactly what I was envisioning. Do you mind sharing the brand or where you bought them? I have been looking everywhere!

    1. I looked for a long time too, and finally found these at IKEA. I've also used a tall, skinny Oxo container too. The price is right at IKEA though, I think they were less than $3.
