Fireman’s Chicken BBQ

As we wrap up summer, this most excellent chicken BBQ recipe warrants firing up the grill at least one more time. 

My husband grew up in Upstate New York and this recipe was a summer staple for his family.  We recently made it and enjoyed it very much. 

Fireman’s Chicken BBQ

Ingredients

  • 2 C vinegar
  • 1/2 C olive oil
  • 1 egg
  • 2 tsp. salt
  • 1 T poultry seasoning
  • 1 tsp. pepper
  • 6-8 chicken breasts or 10-12 wings or legs
  • 10 small red potatoes

Directions

Begin by combining the egg (lightly beaten), 2 C vinegar, 1/2 C olive oil, 2 tsp. salt, 1 tsp. pepper and 1 T poultry seasoning in a large bowl.  Add in the chicken.  Marinade in the refrigerator for 2-6 hours in a covered container. 

Meanwhile, wash and quarter the red potatoes.  Season generously with salt, pepper and olive oil and place in a foil-lined grill basket. 

Remove the chicken from the marinade, piece by piece, and grill the chicken over medium heat for 10-15 minutes, turning 2-3 times.  Cook until internal temperature of the chicken reaches 180 degrees. 

Cook the potatoes over medium heat too, for 15ish minutes until tender and crispy. 

Serve together with sweet corn and enjoy!

Crockpot Balsamic Pork Loin with Apples & Onions

One of my longtime friends recently shared this recipe with me in her weekly grocery bag post.  Queen B mentioned how easy and tasty this recipe is, and knowing that her kiddos love this recipe too encouraged me to give it a try. 

It seemed perfect for fall, and I loved the use of balsamic on pork and delicious apples.  I opted to convert the recipe from the oven to the crockpot, which made it even easier.  We’ll definitely be making this one again!

Crockpot Balsamic Pork Loin with Apples & Onions – Adapted from My Recipes

Ingredients

  • 1 2.5-3lb pork loin or roast
  • 3 T brown sugar
  • 1 T minced onion
  • 1/4 tsp. minced garlic
  • pinch of chili powder
  • pepper & salt
  • 1/4 C chicken broth
  • 1 medium onion, cut into wedges
  • 1/3 C balsamic vinegar
  • 4 apples (sweet/tart combo preferred)
  • 1 T butter

Directions

Pour 1/4 C chicken broth into the bottom of your slow cooker.  Arrange the wedged onion over the top.  Place the pork over the top. 

Combine 3 T brown sugar with 1 T minced onion, 1/4 tsp. garlic, salt, pepper and a pinch of chili powder.  Rub this mixture over the sides and top of the roast.  Then, drizzle 1/3 C balsamic vinegar over the roast. 

Cover, and cook on low for 8-10 hours.

1 hour before dinner, prepare the apples by peeling and slicing them.  We chopped ours into 1-2 inch pieces.  Place into a 9x9 glass baking dish and add 1 T butter.  Bake at 350 for approximately 45 minutes. 

Just before serving, drizzle another tablespoon or so of balsamic vinegar over the pork.  Slice and allow the slices of pork to sit in the juices in the bottom of the crockpot until serving. 

Serve with baked apples, onions and winter squash, if desired.

Garlic Balsamic Crusted Chicken & Wild Rice Pepper Salad

Are you all sugared out yet?  Hopefully you all had a great Halloween!

I thought I’d start out the month of November with a simple dish – filled with yummy veggies, delicious wild rice and a solid serving of protein.  We’ll hold off on the sweets until tomorrow, okay? 

Frog Prince and I absolutely LOVED this dish.  It’s light, yet filling, and the combo of flavors is wonderful.  It does take some time – marinating the chicken ahead of time and cooking the wild rice (about a 1-hour job); but it’s well worth it! 

Garlic Balsamic Crusted Chicken & Wild Rice Pepper Salad

Ingredients

  • 4 chicken breasts
  • 4 garlic cloves, minced
  • 2 T balsamic vinegar
  • 1 tsp. sea salt
  • 1/4 tsp. pepper
  • 1 T olive oil
  • 1/2 C uncooked wild rice
  • 3/4 C brown rice {long-grain preferred}
  • 1 can (14.5 oz) chicken broth
  • 1 1/1 C water, divided
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium zucchini
  • 1 tsp. parsley, dried
  • splash of lemon juice

Directions

Begin by combining the 4 minced garlic cloves, 2 T balsamic vinegar, 1 tsp. sea salt, 1/4 tsp. pepper & 1 T olive oil. 

Pour over thawed chicken breasts, and allow them to marinade {while refrigerated} for 4-8 hours.  If you don’t have that much time, 20-30 minutes will do just fine. 

About 1 hour before dinner, begin the rest of the preparation.  Start by cooking the wild rice* in a large saucepan.  To do so, combine 1 C broth and 1/2 C water along with the 1/2 C wild rice.  Bring the rice to a boil, then reduce heat and cover allowing the rice to cook at a simmer for about 50 minutes. 

Using a second saucepan, combine the brown rice, the remaining broth (about 1 C) and 1 C water and prepare in a similar fashion.  Allow the rice to come to a boil, then cover and simmer for about 20-25 minutes until the rice is tender. 

Alternatively – you can use a rice maker here for one or both of your rice options. 

At this point, fire up your grill.  Toss the marinated chicken breasts onto the grill and set your grill to medium heat.  Cook for 20-25 minutes, turning every 5 minutes or so.  Check the internal temperature for doneness – they should read 180 degrees. 

Next, chop up the bell peppers into 1-inch pieces and the zucchini into quarters, about 1/2 inch thick.  Toss those into a large skillet. 

Sauté over medium heat, using some olive oil if needed (about 1 tsp, or 1/2 tsp), until veggies are crisp tender. 

When the wild rice & brown rice are done cooking, stir those into the sautéed veggie mix.  Add the 1 tsp. parsley & splash of lemon juice to this addition & stir.   

Keep the dish warm on the stove while the chicken is finishing up.  Serve warm – enjoying the chicken & wild rice salad together. 

Refrigerate any leftovers, and enjoy them for lunch the next day.  The salad can be serve warm or chilled – we enjoyed it both ways! 

Here’s to a healthy, wholesome meal after all that candy ;-)

*Note: You can try this recipe using Uncle Ben’s Wild Rice – although any local would say to use the real thing (i.e., plain wild rice), in a pinch, subbing this will be just fine.

Cherry Balsamic Chicken Skillet

A cozy, and delightfully flavored dinner!



This is going on our make again list.  The combination of cherries with the vinegar is wonderful -- almost like a BBQ sauce!  Try it.  You'll enjoy it!


Cherry Balsamic Chicken Skillet - Adapted from Out of the Box and Into the Kitchen 
{Print Recipe}

1 lb. chicken breasts
3/4 C sweet cherries {I used frozen}
1/4 C Balsamic vinegar or vinaigrette
1 C chicken broth
Olive oil, as needed

In a little bit of olive oil, brown the chicken breasts on both sides until nicely golden brown (about 5 minutes per side).


Then, add in the chicken broth (my chicken broth was frozen, hence the rings), and allow the chicken broth and chicken to simmer away for about 10 minutes, covered.


Add in the cherries and vinegar.  Cover and continue simmering, stirring occasionally, for another 10-15 minutes.


Cook until chicken has reached an internal temperature of 180 degrees.


Serve with brown rice and steamed veggies.


Enjoy!
