I love a good bowl of granola in the morning.
I'd eat it every day if I could.
Oh, wait.
I do.
And, now I'll be mixing up my rotation a bit with this A.M.A.Z.I.N.G. granola.
Pumpkin Spice.
Or - in our house...
Sweet Potato Spice.
Pumpkin Spice Granola - Inspired by Colleen
{Print Recipe}
4 1/2 C oats
2 1/2 C Rice Krispy Cereal
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
3/4 C brown sugar
1/2 C sweet potato puree
1/4 C applesauce
1/4 C maple syrup
1 tsp. vanilla
Craisins, optional
Mix the oats and rice krispies together in a large bowl.
Stir in spices and salt.
In another bowl, combine applesauce, sugar, maple syrup and vanilla. Add in sweet potato puree.
Combine the dry and moist ingredients together, and stir to coat.
Spread onto a cookie sheet or into a large baking dish and bake at 350 for ~30 minutes, stirring every 15.
I turned my oven off after 30 minutes and let the granola sit in the cooling oven. Typically I do this with my granola and let it sit overnight -- but I wouldn't recommend that with this recipe! This granola gets pretty hard... so, check it after another 30 minutes or so, and remove it from the oven.
If desired, serve with milk and craisins...YUM!

Mmmmm Mmmmm ... I'll have to try it with the sweet potato puree next time. We LOVE this recipe! So glad you do too ...
ReplyDeleteThis looks terrific! A great way to use up some sweet potato puree I have in the freezer. Can't wait to try this - my kids (ages 3 and almost 2) love granola mixed in with yogurt. Thanks for another great recipe!
ReplyDeleteThank you for posting this...I have GOT to try this one. Looks very tasty. :)
ReplyDeleteThis looks SO good! How long does it last if you make a big pan of it?
ReplyDeleteWow. That just sounds amazing! Thanks for sharing, going to whip this up today.
ReplyDeletemy mum used to make granola all the time. loved the smell of it toasting in the oven. this pumpkin spice version sounds yummy. Especially the sweet potato thing. How on earth did you think to include that? Inspired!
ReplyDelete@ even-star -- We use sweet potato because my husband is allergic to pumpkin. In fact, sweet potato is an excellent substitute for pumpkin -- we do it in all our "pumpkin" recipes.
ReplyDelete@ Lisa -- We made one batch on Friday morning, and I primarily ate it for breakfast on Sunday, Monday, Tuesday and today I polished it off. I have about 3/4 C of it with milk & 1/4 C craisins. Enjoy!
Yummy! I am going to have to try this--I have never made granola and the store brands are so high in fat and not a great taste--thanks!
ReplyDeleteyum! ok so i can use pumpkin instead of the sweet potato? yay!
ReplyDeleteYUMM!!! This looks fabulous, can't wait to try it!
ReplyDeleteOK ... I just HAD to do it! Pumpkin Granola is baking in my oven right now. Can't wait for breakfast tomorrow!
ReplyDeleteI just LOVE granola!!! This recipe for granola looks wonderful! - amazing how sweet potato puree is actually in it! I have to make it!!!! :-)
ReplyDeleteOh. My. Goodness.
ReplyDeleteThat looks amazing!! I've recently begun making granola on a regular basis, riffing off of an Alton Brown recipe. This looks awesome!! (Every Halloween I carefully cook, puree, strain and freeze all of our jack o' lantern pumpkins. It gives me enough pumpkin to last all year...and I'm always looking for creative ways to use it. This just made the list!)
Yummy! I never in a million years would have thought to put sweet potato puree in my granola! Brilliant!
ReplyDeleteI love a good granola, and this one sounds really good!
ReplyDelete:)
ButterYum
Sounds delicious!! Is it crunchy??
ReplyDelete@ Katherine --
ReplyDeleteYes, it's crunchy!!
I don't have Rice Krispy Cereal. Should I add more oats then? I plan on adding in some wheat germ too.
ReplyDeleteThis looks "fantastic". Does it need to be refrigerated? AND how long will it keep???
ReplyDelete@Donna --
ReplyDeleteWe go through our batch in about week; and there's no need to refrigerate it once it's been cooked.
Enjoy!

ReplyDeleteOh my word! I am so making this next week!!
ReplyDeleteOh I can't wait to make this, we love granola also, and my boys would just love this too.
ReplyDeleteThanks for sharing!
Questions!
ReplyDeleteCan I substitute anything for the maple syrup and just use some maple flavoring? How do you think that would work? What about honey?
Hi Martha --
ReplyDeleteI'd say, try using honey with maple extract flavoring added in ... let me know how it goes!
Just made this today and is fantastic - thank you! I think you could even cut back on the brown sugar a bit, at least down to 1/2 cup, and it would still be good. I ate mine sprinkled over some plain yogurt - yummy!
ReplyDeleteI can't wait to make this next!
