Menu Plan–September 8

Why is it so hard to decide what to make for dinner?!

It’s really quite an easy decision, but somehow I get overwhelmed by all the possibilities of what I could make, and all the deliciousness all over Pinterest that I am paralyzed.  You’d think this decision was weighty or something. 

Urg. 

Regardless of how hard it is, I know that coming home from busy days at work to know what we’re having for dinner means that we ultimately eat better and dinner time is much less stressful. 

So…. here’s the menu for our week:

Sunday
Garden Veggie Stuffed Omelets {zucchini, squash, tomatoes, green beans & bacon!}
Leftover  Monterrey Chicken Sandwiches {new} with Homemade BBQ Sauce & corn

Monday
Whole Wheat Buttermilk Waffles with Fruit
Remy’s Ratatouille, Brown Rice, Green Beans

To do: Make extra brown rice, cook wild rice, thaw chicken (x1 extra)

Tuesday
Granola & Blueberries
Wild Rice & Bell Pepper Salad with Grilled Balsamic Chicken

To do: Nothing.

Wednesday
Zucchini Bread {freezer}
Chicken & Veggie Wraps, steamed veggies

To do: Thaw spaghetti sauce, make filling for the manicotti

Thursday
Granola & Blueberries
Crockpot Manicotti {new}

To do: Make baked oatmeal, thaw Italian sausages

Friday
Honey Whole Wheat Cinnamon Raisin Bagels {freezer, new} with Cream Cheese
Grilled Italian Sausage, Sweet Potato Fries

To do: Make enchiladas (or prep for breakfast)

Saturday
TBD – Perhaps Enchiladas {new}, Spinach Open-Faced Egg Sandwiches or Tomato, Mushroom Oven Omelet {new}
Pasta with Sausage and Mozzarella {new}

To do: Make granola, granola bars, cookies & applesauce for the week.

  1. I do! Every week, I painstakingly go through my boards and my cookbooks looking for the perfect recipes. I live in fear of missing out on something while also forgetting to repeat a recipe I really loved.
