SnoWhite's Chicken Stew



We love our veggies here!  This delicious stew combines many staple veggies into a delicious dish -- we enjoy it over rice, with crusty bread or with crackers.  If you want to make it GF, you can easily omit coating the chicken with flour, and just add a little corn starch to the stew as it cooks to thicken the sauce up!

1 chicken breast, cut into chunks
2 T whole white wheat flour
1-3 tsp. olive oil
1 C onion, chopped
1 C carrot, chopped
1 can diced garlic and oregano tomatoes - undrained
1 can diced tomatoes (or stewed tomatoes) - undrained
2 C zucchini, chopped (about 1 large zucchini)
1 medium potato, chopped
1-2 C fresh mushrooms (optional)
Freshly grated cheese -- either mozarella or Parmesan
Crackers or crusty french bread

Coat chicken in flour. Then, place 1-2 tsp. olive oil in a large skillet.  Cook chicken, onion and carrots for 10 minutes; or until chicken is done and veggies are tender.

Add undrained tomatoes, zucchini, and potato and mix well (may also add mushrooms here).



Bring mix to a boil and then reduce heat and simmer for 20-25 minutes. Top with cheese when served.

Enjoy with crackers or crusty bread.
