Apple Cake



Frog Prince grew up eating this cake... it's his grandfather's recipe. We LOVE it. It's an easy recipe to make, and the cake keeps well for a few days on the counter and longer in the fridge.... but, it's so delicious and moist that it likely won't ever make it to the fridge ;)

Apple Cake - Frog Prince's Grandfather

1/4 C butter, softened (or 1/8 C butter, 1/8 C applesauce)
1 C sugar
1 egg
1 tsp. vanilla
1 C flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 1/2 C apples, peeled and diced
2 T hot water

Cream together butter and sugar. Add egg and vanilla. Mix well. In a medium bowl, combine dry ingredients. Then, slowly add the dry ingredients to the creamed mixture and stir well. Add the apples and hot water. Spread in a greased 9 inch pie plate. Bake at 350 for 45 minutes.

We have doubled the recipe and baked it in a 9x13 pan.

3 T butter, softened

1 C brown sugar, packed
2-4 T sugar
1 egg
2 tsp. vanilla
1 C whole wheat flour
1 C flour
2 tsp. cinnamon
2 tsp. nutmeg
2 tsp. baking soda
~4 C apples, peeled and diced
4 T hot water
