We have really come to enjoy ratatouille! It all started with that great little Pixar movie, and has led to many a great dinners at our place. While we love the recipe we've found from Cooking for Engineers, I wanted one I could make in the crockpot. Thus, a new recipe is born...
Ratatouille in the Crockpot
4-6 garlic cloves, minced
8oz mushrooms, button or brown, sliced
1 medium zucchini, chopped
1 medium onion, diced
1 can diced tomatoes, drained
1 medium eggplant, diced
1 T tomato paste
3/4 C chicken or veggie broth (I used homemade!!!)
5 sprigs of parsley (or ~1 tsp. dried)
4 sprigs of basil (or ~1 tsp. dried)
1 T olive oil
Prepare all the vegetables and set aside.
In a skillet, heat oil over medium heat. Add garlic and saute in the oil until the garlic smell is strong. Add in onions and cook until translucent.
Add in tomato paste and cook just until paste begins to stick to the pan. Then, add in your veggie broth! I added 3 cubes of broth... for me, each cube is roughly 1/4 C frozen broth. Stir to combine.
Then, place diced veggies (except tomatoes) in the crockpot.
Pour the tomatoes in stir to combine.
Close the lid and cook on low for 1 hour or so. Then, add in the diced tomatoes (make sure you drained them!) and the spices. Stir to combine. Then, continue cooking on low for at least 4 more hours..., or until you're ready to eat.
Enjoy topped with mozzarella cheese!!
Verdict: Making it in the crockpot was super easy and it was delicious. The flavors blend together nicely, and make a flavorful dish. You do get a stronger flavor than you do when we make it on the stove top, but we like it!
This looks divine but I know my little guy wouldnt touch it and my hubby is skeptical of anything with eggplant.

ReplyDeleteThat looks good to me (minus the mushrooms). It's similar to the tomato stew that I make with eggplant; I use more eggplant and no zucchini, but that would be a good addition.
