Oat Krispie Granola Bars

I've been searching for the "perfect" granola bar. I don't know that I've found it yet, but we do like this the addition of Rice Krispies to this one.

Oat Krispie Granola Bars

3 C oats (quick cook)
1 1/2 C Rice Krispies
1 C whole wheat flour
2 tsp. vanilla
1/2 C honey
1/4 C applesauce
1 tsp. baking soda
1 stick butter, melted
2 T brown sugar
1 C "extras" -- raisins, craisins, chocolate chips

Mix together all dry ingredients.

Then, add in the wet ingredients. Stir until moist.

Add in "extras" and press granola bars down into greased cookie sheets. Use a rolling pin to really pack 'em in.

Bake at 325 for 18 minutes, until just golden brown. You may wish to remove the bars in the midst of cooking and press down with the rolling pin again.

Cool for 10 minutes, and then use a pizza cutter to cut the bars. Allow them to cool completely before removing them from the pan.

These may be kept in an airtight container for a week or so, in the fridge for a bit longer, and in the freezer for a couple months.

[I've tried making them with less butter... but the do get more crumbly. Just an FYI.]

  1. My granola bar recipe also has rice krispies in it. I'm actually planning on posting the recipe sometime this weekend since they are on my snack menu for next week.

  2. I have never made granola bars, but we love them. I will have to write this one down and give it a try :)
