Blueberry Cherry Pie



Our two favorite fruits, together. Married happily in a delicous pie. Yum.

Served with vanilla ice cream, it makes the perfect red, white and blue holiday dessert!

Blueberry Cherry Pie - Adapted from Allrecipes

Pie
2 C cherries, halved
2 C blueberries
2/3 C brown sugar
1/4 C whole wheat flour
1 tsp. cinnamon
1/2 tsp. lemon juice
1 recipe oatmeal pie crust

Topping
1/4 C flour
1/4 C brown sugar
3 T butter, softened

Prepare oatmeal crust in an 8 or 9 inch pie plate.


Pit and cut the cherries, and wash the blueberries.


Combine the two fruits in a large bowl.


Add the flour, brown sugar and cinnamon.


Stir well (and carefully) until berries are coated in the mixture.


Spread the berries into the pie crust.


Then, pre-heat your oven to 375.

While the oven pre-heats, mix together the topping ingredients until crumbly.



Sprinkle the topping over the fruit mix.



Place the pie on a cookie sheet, and bake at 375 for 1 hour, or until the berries are bubbly.


Enjoy warm with freshly whipped cream, or ice cream.


Or, enjoy for breakfast, telling yourself you're eating oatmeal and fruit ;-)

  4. You could likely use frozen cherries, I would just thaw them first to prevent the pie from getting overly watery.
