Sweet Potato Muffins

I do love sweet potatoes. I have since I was a little girl.


Sweet potato muffins have been on my breakfast list to try for a while now -- almost a year! But, this weekend with the rush of cooler weather, I baked up my sweet potatoes for these delicious muffins.



Sweet Potato Muffins - Modified from Laura at Heavenly Homemakers

2 C whole wheat flour
2 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. sea salt
1/4 C honey
1/4 C brown sugar
1 egg
1 C sweet potato, mashed
1/4 C raisins, optional
1/2 C milk
3 T applesauce
1/4-1/2 C granola (for topping)

In a large bowl, combine flour, salt, nutmeg and baking powder.



Add to the flour the honey, brown sugar, egg, sweet potato, milk and applesauce.



Mix together the ingredients.



Scoop dough into greased muffin cups (you'll need about 15 muffin cups).



Top with a tsp. or so of granola. Press granola lightly into the muffins.



Bake at 400 for 12-15 minutes, or until muffins are done.



These smelled delicious while baking and were filling and tasty. I definitely shouldn't have waited a year to make these :) Next time I'll add some cinnamon. Yum.

  5. Yummy, I love sweet potato muffins! I have also used butternut squash if I didn't have sweet potaotes. Very tasty:)

  6. When I see sweet potatoes- I think pumpkin. I don't like pumpkin baked goods, but sweet potato- that might be another story.

  16. I can't wait to make these! I LOVE sweet potatoes and I LOVE muffins. What a great combination. I am always looking for nutrient rich snacks to give the toddlers, too, and this fits the bill.

  17. I made these with the addition of about 15oz. of chocolate chunks - maybe 1 cup? The chocolate is yummy in them - but the kids didn't like these except for the 3 year old and 1 year old. I thought they tasted good, but definitely healthy tasting. Great way to use up the sweet potato mash I froze a couple of weeks ago!
