Cinnamon Oatmeal Muffins



Want an oatmeal cookie for breakfast?  My first bite into this muffin made me think of an oatmeal cookie.  It was delicious -- and I bet if you added some raisins, you'd have a healthy oatmeal raisin cookie muffin!  We made our version with apples, and they were delicious.



Light, fluffy, and delicious.  Perfect for breakfast, lunch or an after school snack. 

Cinnamon Oatmeal Muffins - Adapted from someone at Curves for Women

1/2 C whole wheat flour
1/2 C white flour
3 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. nutmeg
3/4 C oats (I used quick cook)
1/2 C brown sugar, packed
3/4 C chopped dried apples (or raisins)
1 egg
1 C milk
1/4 C applesauce

Preheat oven to 400. Lightly grease the muffin tins/cups.



Sift together flours, baking powder, salt and spices.



Stir in oats, brown sugar and fruit bits.





Meanwhile, beat the egg, milk and applesauce together in another bowl.



Combine the wet and dry ingredients until batter is moist.  It's okay if the batter is lumpy, or a little runny -- the applesauce makes it that way.



Fill muffin cups 2/3 of the way full, and bake for 20 minutes, or until muffins are lightly browned.





Makes 12 muffins, or 6 jumbo muffins, or 50 mini muffins.

  12. I made these last night and they are very good. A nice, simple muffin. I didn't use apple or raisins because I don't like them, but I put 5 cinnamon chips on top of each one. I also more than doubled the cinnamon & nutmeg, and added pumpkin pie spice, and I used 1 cup of whole wheat white instead of half white & half wheat. Oh, and rolled oats, not quick cooking.

    Thanks for the great recipe, I like this one. Would be nice with a meal, although I had one on its own for breakfast this morning and they are already a hit at the office. Thanks!
