Red Pepper Quiche

A few weeks ago, Lara posted this delicious looking quiche made by her sister.. and I've been drooling over it ever since. it's been on our menu numerous times since she posted it, but only now nearly 2 months later, did I get around to making it. And, I have to ask myself.... why did you wait so long?!

Red Pepper Quiche - Inspired by Lara @ Recipe Shoebox

1 package crescent rolls*
1/2 tsp. basil
1 medium red bell pepper, diced
1/4 lb. breakfast sausage, sliced
2 T minced onion
1/2 C sour cream
2 eggs
1 C extra sharp cheddar cheese

Spread the crescent rolls into a 9-inch pie plate and press in to cover the bottom and sides. Sprinkle with basil.



Preheat your oven to 350.

Meanwhile, saute the breakfast sausages until browned. Then, slice into small segments. Using the same pan, saute the red peppers until crisp-tender.



Then, add in the sausage and minced onion.



In a small bowl, mix together the eggs, sour cream and pepper.



Add in 1/4 C cheese.



Place the pepper/sausage mix into the pie plate.



Pour the egg mixture over the top.



Sprinkle the top with the remaining cheese.



Bake at 350 for ~40 minutes, until the center is set and the cheese is lightly browned.



Serve warm.



*If you want a FABULOUS crust recipe, use Lara's. I just had a tube of dough we needed to use up.

  1. The crescent roll crust plus the cheesy topping look delicious! I used a crescent roll crust the last time I made pot pie, to save time and it was a huge hit. Yum!

  3. Yum! Sounds delicious. I would add mushrooms ... of course. Also, have you ever tried making the homemade crescents? That is one thing I have never done. They often go on for .99 and so I just always buy them.

    Have you ever tried making your own crescents? I've seen recipes a few times but I always buy them because they are so cheap and I don't use them that often anyway. What do you think? Worth it or no?

  7. My mouth is watering. I think I have what I need to make this- except I'll have to make a pie crust and substitute plain low fat yogurt for the cream cheese. I think it will work, though. I'm off to try it!

  9. This looks sooo good. I usually don't add crust to my quiche because I find the taste is sort of weird but I think I might try the crescent rolls. Good idea! I too would add mushrooms! Thanks for sharing!
