This week, I chose Melissa d'Arabian as my Food Network Chef for the FNCCC and her recipe for Roasted Asparagus with Lemon Vinaigrette.
We enjoyed the asparagus, but like our regular roasted asparagus better.
Roasted Asparagus with Lemon Vinaigrette - Recipe from Melissa d'Arabian
3/4 lb. asparagus
1/2 T olive oil
salt and pepper, as desired
Vinaigrette
1/2 tsp. Dijon mustard
1/2 lemon, juiced
1/2 T olive oil
pepper, as desired
Wash the asparagus and chop off the woody end.
Line a cookie sheet with tinfoil.
Lay the asparagus on the baking sheet and lightly drizzle with the olive oil.
Roll the asparagus in the oil to coat.
Sprinkle with salt and pepper.
Roast in the oven at 400 for 10ish minutes, until stalks are slightly softened.
While the asparagus is roasting, prepare the vinaigrette by mixing together the lemon juice, Dijon mustard, olive oil and pepper.
Serve the asparagus spears warm drizzled with the vinaigrette.

{ps - did you know... white asparagus is simply asparagus grown in the dark?!}
Looks delicious but I am an asparagus purist also, just plain and simple. I bought some white asparagus the other day and was wondering about it. Good to know.
ReplyDeleteVery yummy side dish! (When my mom was is Germany they ate white asparagus every day. She said it does have a more bland "potato" flavor than the green.)

ReplyDelete@ Candi -- Yep, the flavor will be less "plant-like" when they are white because of the absence of chlorophyll.

The vegetables on teh island are not terrific. I haven't seen any asparagus yet that i would buy, and I love asparagus
asparagus is one of my favorites. neat fact about white asparagus! i have never tried it - does it taste the same?

ReplyDeleteIt's so neat to see my friend Melissa's recipes popping up on some of my favorite blogs! :) I am SO proud of her! She and I met years ago before she was even pregnant with her twins but was attending MOPS with her THEN youngest. And let me tell you -- EVERYONE loved with it was her table's turn to bring food becuase we ALWAYS knew she'd bring somethign delicious!

ReplyDeleteThis is delight full and Joanne being ur sweetfren too, am inviting u here for her little party(its her birthday dear -i know that u know dear) which is a suprise party for her ...do leave her a wish in the sprinkles ok.....my feeds arent working so am trying my best to find all her pals to leave her a wish in the sprinkles before she gets there or even after....will ya help too to make it a little sucess....and leave her a wish too?
