Berry Oatmeal Muffins



Berry Oatmeal Muffins - Adapted from Two Peas

1 1/4 C wheat flour
1 1/4 C oats (I used quick cook, but Old Fashioned will work)
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 C applesauce
1/2 C milk (+ 1 tsp. vinegar)
1/2 C brown sugar
1 egg
1 tsp. vanilla
1 C mixed berries

Begin by mixing together the dry ingredients.



Then, mix together the milk, applesauce, egg, brown sugar and vanilla.



Measure out the berries.



Combine the wet and dry ingredients.



Stir until just moist.



Gently fold in the berries.





Then, fill muffin tins 3/4 full.



Bake at 375 for 15-18 minutes, until muffins are done.



Allow to cool for just a few moments before digging in :)



Makes 12-16 muffins.

  4. I have been reading your blog for the past month or too and this is the first time I have tried a recipe. They were delicious! But they were kind of spongy and flat. It didn't effect the taste a whole lot I believe, but they had a strange texture. Any idea what I did wrong? Maybe i didn't bake them long enough!

    The only thing I can think of is that I used white wheat flour... if you used traditional wheat flour, you might need to up the baking powder in order for them to rise. These were more dense muffins due to the oats and wheat flours, so maybe more baking powder will do the trick.

  6. I made these with white flour, white beans instead of applesauce and water instead of milk. They were heavy but for us the nutrition and taste outweighed the heaviness. I did have to add a touch more water because the beans were not liquid enough. My boys said they were a make again! Thanks
