Zucchini Boats



Still have zucchini?

This was a wonderful way to enjoy the fruits from the garden!!


A delicious combination of meat, BBQ sauce and cheese.  Quite filling and easy to make -- makes these a hit at our place!

BBQ Zucchini Boats - Adapted from Out of the Box and Into the Kitchen
{Print Recipe}

4 medium zucchini
1 lb. lean ground beef
3/4 C cherry BBQ sauce
1 C brown rice, cooked
1/4 C shredded extra sharp cheddar cheese

Begin by browning the ground beef over medium heat until meat is no longer pink.  You may wish to season the meat with salt/pepper or garlic.


Meanwhile, cook your rice.


Then, slice the zucchini lengthwise in half and carefully scoop out the inside seeds.



Then, spread some olive oil onto the top of the zucchini and place then carved-side down onto a cookie sheet.  Alternatively, you may place these boats right on the grill and grill them for 10-15 minutes.

  

Roast at 425 for 10ish minutes until the boats are tender.


When the rice is done, add it to the browned beef and stir to combine.


Pour in the BBQ sauce and blend well.  Let this mixture simmer, covered, until just before you fill the boats.


When the zucchini boats are tender, add the cheese to the ground beef mixture.  Stir to blend and let the heat from the meat melt the cheese.


Carefully spoon the filling into the zucchini boats.


Sprinkle with additional cheese, if desired.


Then, return them to the oven/grill for another 5-10 minutes until lightly browned and warm throughout.

  3. The zucchini boats look like they would hit the spot! I bet this would make zukes more palatable for my children as the seasonings would work their way down and flavor the zucchini.

    Last week I hosted a party and I sent everyone home with a bag of rhubarb (my plants will not quit) and a link to your rhubarb cake. I have heard back from 2 of the families who made it and loved it. One friend's oven broke, so she adapted the recipe and made it in the microwave. Thanks for sharing your delicious recipes!
