Sweet Potato Chocolate Chip Granola Bars



With all the nuts in granola bars, finding a granola bar for someone with a nut allergy is a challenge!  We have a dark chocolate cherry granola bar that we enjoy, but I wanted to try something different.


Sweet Potato Chocolate Chip Granola Bars.

These are delightful!  Very moist and chewy.


Pumpkin Sweet Potato Chocolate Chip Granola Bars - Adapted from Two Peas

3 1/4 C Old Fashioned Oats
1 tsp. cinnamon
1/4 tsp. nutmeg
pinch of ginger and cloves
1/2 tsp. salt
1/2 C brown sugar
1/2 C sweet potato puree {or pumpkin}
1/4 C applesauce
1/4 C honey
1 tsp. vanilla
1/2 C dark chocolate chips

Mix together the oats, salt and spices in a large bowl.


Combine the sweet potato puree, applesauce, honey and vanilla in a medium sized bowl; whisk until smooth.


Pour the wet ingredients over the spiced oats and stir until moist.



Then, stir in the chocolate chips.


Pour the granola bar mix into a lightly greased 9x9 glass baking dish, or a 7x11 baking dish.


Bake at 350 for 30-35 minutes, until golden brown on the edges.

These granola bars will be moist and chewy, so be sure to bake them until the edges are slightly browned.

Cool on a wire wrack for 10ish minutes, and then slice into bars.  Cool completely.


Store in an airtight container on the counter for up to 3 days, and then in the fridge if you need to store them longer.

  3. i made these yesterday and it reminds me more of a baked oatmeal than a granola bar though. not exactly what i thought they would be, but still delightful!
