Kris Kringle Pancake Mix

Growing up, my mom used to make us special Christmas pancakes.  She called them Kris Kringle Pancakes. 

These pancakes came from a DIY mix she kept in her pantry closet.  They are a delightful combination of wheat, oats and cinnamon – perfect for this time of year. 

A few years ago, I decided to try my hand at making a batch fresh – and these Kris Kringle Pancakes have often made an appearance at our table since 2009.  This year, however, I wanted to make the mix up, so my mom provided the recipe for me. 

Kris Kringle Pancake Mix – Adapted from Taste of Home

Ingredients

  • 4 C oats (quick cooking preferred)
  • 4 C white whole wheat flour {or 2 C each, white whole wheat & regular whole wheat}
  • 3/4 C brown sugar
  • 1 C powdered milk
  • 3 T baking powder
  • 2 T cinnamon
  • 3 tsp. salt
  • 1/2 tsp. cream of tartar

Directions

In a large bowl, combine 4 C oats, 4 C flour (I used 2 C whole wheat & 2 C white whole wheat), 3/4 C brown sugar, 1 C powdered milk, 3 T baking powder, 2 T cinnamon, 3 tsp. salt & 1/2 tsp. cream of tartar. 

Use a whisk and stir together until well blended. 

Store mix in an airtight container, large enough to hold 8 C of dry ingredients.  Or, if you are interested, package up the mix in 2-4 C portions to give as Christmas gifts!

When you are ready to make the pancakes, you’ll need:

  • 2 eggs
  • 1/3 C oil (or applesauce)
  • 1 C water
  • 2 C pancake mix

Combine the 2 eggs in a large bowl and mix them up.  Then, add in 1/3 C oil.  We typically use all applesauce, but we’ve also enjoyed 1/6 C applesauce, 1/6 C olive oil.  Stir in the 2 C pancake mix alternately with the 1 C water until well blended.

Cook on a hot griddle (ours is usually heated to around 350 degrees).  To do so, use a soup ladle to spoon about 1/4 C batter onto the griddle. 

Cook until bubbles begin to form (all that CO2 escaping!), and then flip over, continuing to cook until pancakes are nice and brown. 

Serve with apple-y topping, mixed berry sauce or good ol’ maple syrup.  Be sure to add an extra sprinkle of cinnamon on the top for good measure. 

Each batch of pancakes makes 10 pancakes.

  4. It WOULD be a wonderful gift - and I too plan to keep some in the pantry. La Leche League cookbook is big on the pre-made (homemade) mixes...I need to begin to do this more often.
