Honey Mustard Chicken Tenders



These fun chicken tenders pack a powerful flavor. 



They are refreshing and perfect for this time of year; bringing a hint of summer during spring! 



Honey Mustard Chicken Tenders
– Adapted from Good Life Eats

Ingredients

  • 6-8 chicken tenders
  • 1 tsp. minced onion
  • 4 T spicy brown mustard
  • 5 T honey
  • salt and pepper

Directions


In a large skillet, cook chicken tenders (use olive oil if you typically do when cooking in your sauté pan) over medium heat for 1-2 minutes.



Season with minced onion, salt and pepper and continue cooking for another 3-4 minutes.  Then, flip the tenders over. 



Meanwhile, mix together 4 T spicy brown mustard and 5 T honey. 



Mix well. 



When the tenders have cooked 5 minutes on the second side, reduce the heat to medium-low. 



Pour in the honey mustard sauce and simmer the chicken tenders for 10-15 minutes, stirring occasionally. 



Check that the tenders have reached 180 degrees, then serve with excess honey mustard sauce. 



Serve warm, perhaps alongside creamy cauliflower & zucchini rice
