Ingredient Spotlight: Blueberries

Blueberry season is just around the corner, and if you’re like me, you’ve had a hard time resisting the blueberries in the grocery store lately!

Apparently, you like them too because in North America alone we consumed 853 million pounds of blueberries in 2011.  Wow. 

Blueberries are one of my all time favorite fruits – and they pack a nice punch too:

  • Blueberries are high in Vitamin C
  • Blueberries are a great source on antioxidants
  • Blueberries have manganese -  good for your bones!
  • Blueberries are packed full of fiber

You don’t have to list off their good-for-me qualities to convince me to enjoy them.  I love them atop homemade granola and milk for a morning breakfast. Or, with ice cream…. when we run out of milk :)

Some of our other favorite ways to enjoy blueberries are:

Cinnamon Rolls – either plain blueberry or a new fav blueberry rhubarb!

Waffles & Pancakes – Love, love, love.  In fact, I’m having some blueberry buttermilk waffles for breakfast today! 

Blueberry Rhubarb Jam – Amazing, any way you choose to use it!

Blueberry Lemon Oat Bars – Now these are downright amazing.  And, made with Greek yogurt.

Blueberry Biscuits with Blueberry Vanilla Sauce – These are perfect for a brunch!
