Friday brought fall break to the Finding Joy in My Kitchen household. Frog Prince and I took advantage of the day off and went to see some fall colors – on the trees & in the sunrise.
We arrived home late Friday night, and I was thankful we had this Roasted Vegetable Lasagna in the fridge for leftovers. Yum.
Then, for dessert, we topped it off with leftover Caramel Apple Cheesecake with Crumble Topping. It was a great end to a fantastic day of fall colors.

Crockpot Italian Sausage Vegetable Soup, Artisan Bread
To do: Make muffins while baking bread
Thursday
Sweet Potato & Oat Muffins with Apples – or Apple Cinnamon Oatmeal Muffins {new}
Spinach & Mushroom Quesadillas (or Calzones)
To do: Thaw pork
Friday
Granola
Crockpot Maple Apple Pork & Crockpot Winter Squash
To do: Thaw Italian sausage

Love having homemade granola for breakfast. It with yogurt is my go-to. Oh my goodness, that cheesecake looks amazing. Yum!
