Ingredient Spotlight: Cottage Cheese/Ricotta Cheese

Today’s Ingredient Spotlight features yummy cheeses – cottage or ricotta. 

We most often use these cheeses in Italian dishes, how about you? 

Here are some of our favorite ways to use cottage cheese:

Crockpot Ziti – A fantastic meal made by your crockpot in 4 hours!  Love, love, love this one, especially for busy weekends.  Get the recipe here.

Savory Vegetable Tartlets -  This is a newer recipe for us, and a true favorite.  It’s an elegant appetizer, but also works for a Friday night.  Get the recipe here.

Make-Ahead Spinach & Pasta Bake – This make-ahead dinner is delicious.  It’s filled with yummy veggies and you can simply put dinner in the oven 45 minutes and you have a fantastic ziti.  Get the recipe here

Garden Vegetable Lasagna – This is a true summer lasagna as there are 9 different veggies in this lasagna, and the noodles are zucchini!  Completely GF, yet filling enough to satisfy your meat-lovers too.  Get the recipe here.
