Quesadillas

Quesadillas - Snow White and Frog Prince

4 tortillas (we use the small size) or our homemade!
4 oz mushrooms, sliced
Diced pepper (green, red, yellow and orange) and onion mix (about 1 C) -- we use Kroger frozen pepper recipe beginnings
1 C fresh grated extra sharp cheddar cheese
1 C salsa, optional

Heat a stir fry non-stick pan over medium heat until hot (if not non-stick, add oil or butter). Add sliced mushrooms, and peppers and saute until crisp-tender (about 5 minutes).



Meanwhile, heat a frying pan over medium heat until water splashed in it boils away. Place into the frying pan. Cook for 2-3 minutes until lightly browned, then flip. Top tortilla with veggies and cheese, and cover with a second tortilla. Allow cheese to melt a bit, and then the quesadilla over. Allow to cook until cheese is melted and tortilla is lightly browned and crispy. Enjoy warm with salsa, if desired.
