Favorite Dinner Recipe

Picking a favorite dinner recipe is really hard because, honestly, we have so many favorites!

When asked to pick a top 10 of our favorite dinners... we actually picked 11 dinners, and added 12 desserts (just because we couldn't decide).

Today, Kelly's Show Us How You Live theme is your favorite dinner recipe..... thus, we had to think hard to come up with which recipe to share. We picked our favorite lasagna -- filled with TONS of veggies!

Lasagna with Vegetables



1 T olive oil (I omit)
2 C fresh mushrooms, sliced (about 8 oz)

1 C carrots, shredded
1/2 C onion, diced
16 oz tomato sauce
6 oz. tomato paste
1/2 C sliced black olives (I omit)
2 tsp. dried oregano
10 lasagna noodles, raw (I use whole wheat)
1 lb. fresh spinach, raw, and trimmed (most of a 10-oz bag)
1 lb. cottage cheese (I use fat free, small curd)
1 lb. Monterey Jack Cheese, sliced
1 oz. Parmesan cheese, grated - for top

Cook mushrooms, carrots and onion in olive oil until tender, but not brown. Stir into veggies the tomato sauce, tomato paste and oregano.

In a greased 9x13 pan, layer: sauce, noodles, cottage cheese, spinach, Jack cheese, and sauce. Repeat, beginning with noodles, and ending with sauce. Sprinkle Parmesan cheese on the top. Cover with foil (I often omit) and bake at 375 for 1 hour, until noodles are tender.




Let stand 10 minutes before cutting.

  2. This looks great. I love veggie lasagna, but I haven't tried putting black olives in it. Great idea.

  5. So glad I found you at Gollum's site this morning. Thanks for coming to grannymountain. The picture on my header is Beaver Lake where we live up in the NW corner of Arkansas. Our view is further up Prairie Creek Cove but this picture is down the cove near the main body of the lake. Come visit often and I will be checking and copying many of your recipes!
