Sausage and Pepper Scramble

It's been kind of a low-key week here at our place... as I'm feeling a bit under the weather.  Thus, we opted for an "easier" recipe from the Food Network chef, Cat Cora.  Apparently, she was the first female Iron Chef.  Cool.

Sausage and Pepper Scramble - Adapted from Cat Cora

5-6 turkey breakfast sausages, cut into bite-sized pieces
1 medium red pepper (we used yellow)
1 medium yellow onion, chopped
3 garlic cloves, minced
1 tomato, diced (we omitted, since we didn't want to make a trip to the store)
2-4 eggs (we used 2, Cat recommends 4)
salt and pepper to taste
1/4 C Monterery Jack cheese :)  (our addition)

Begin by cooking the sausage bites until browned.

Then, add in the diced pepper and chopped onion.

{we used minced onion}

Saute until veggies are crisp/tender.  Then, add in the lightly beaten eggs, along with the salt and pepper, to taste.

Lightly scramble as the eggs cook.

Add in the cheese :)

Serve warm!

We served ours with grilled hash brown potatoes -- they were especially yummy mixed all together.

  1. Looks like a wonderful breakfast. Hope your feeling better.

  2. I -almost- made this one but when I went to the store to get minced lamb to make the sausage (I was going all out on this one haha!) they were out... and then I discovered eggplant was on sale so I made moussaka instead. I'm wondering if I should've kept hunting for the lamb now cause this looks GOOD!

  3. Hard to go wrong with sausage in my book! Yum!

  4. Yum! I make something very similar to that .. except it also has zucchini and mushrooms and we serve it on tortillas at Christmas.

  5. Yum! I am making something very similar for dinner tonight. I can't add the peppers though (insert sad sigh) or nobody would touch it. I love doing breakfast for dinner! Thanks for participating this week (and every week :)@!

  6. Oh my! Double yum!

  7. What a savory looking breakfast. I hope you feel better soon!

  8. I LOVE Cat! :) She's awesome. This dish looks delicious. Thanks for sharing. :)

  9. It really does sound great for a quick fix meal. Nice recipe!

  10. Ooh yum! My hubby loves scrambled eggs so I bet I could actually get him to eat this!

  11. This looks like something my family would like, and it's gluten free too (as long as the sausage is gf).

Thanks for letting me know about your MIL. I really appreciate it.

  12. I am amazed that you were under the weather and felt like eating eggs!!! Eggs give me stomach aches though!!! = ) This looks like one I may try for a MOPS meeting though sometime

  13. What a wonderful breakfast, lunch, dinner or anytime dish! Thanks for sharing with us. :)

  14. Sometimes you really do just need a simple and easy recipe to get you going. This looks like it accomplishes this while still being delicious!

  15. Never thought to add eggs to this dish. Good thinking Cat Cora!

Thanks for stopping by! I'd love to hear from you; especially how you're finding JOY in your kitchen.
