Crockpot Chicken and Barley Soup



This soup got great reviews by Frog Prince. It was so easy to make too -- especially since we still have leftover turkey from The Giant in our freezer.

Crockpot Chicken Turkey and Barley Soup - Adapted from Crockpot Cookbook

1 C sliced celery
1 1/2 C sliced carrots
1 can diced tomatoes, undrained
1 C diced turkey (or chicken)
1 garlic clove, minced
3 T minced onion
2 1/2 C chicken broth
1/2 tsp. basil
1/4 (or less) tsp. pepper 
1/2 C barley

Combine all ingredients (except barley) in a crockpot.



Cover, and cook on low for 5-7 hours, or on high for 4-6 hours.



About 1 hour before serving, add in barley.



Serve warm.

  2. I found your blog today, although I don't remember how I got here! LOL! I have fallen in love with all your recipes and I really enjoyed your menu planning tips. I try hard to menu plan, but do not have the follow through that I need. I was wondering if there was any way to receive updates from your blog via email?
