Veggie Scramble


We love breakfasts around here, but most of our breakfasts are ... well, wheat/carb-based.  This delicious and filling scramble starts your day off wonderfully with colorful vegetables; a welcomed change for us :)


Veggie Scramble

Serves 2

2 eggs 
1/2 tsp. olive oil
1/2 C broccoli, chopped
1/2 medium red bell pepper, chopped
4 oz. mushrooms, sliced

1/8 C shredded colby jack cheese
pepper, to taste

Begin by lightly heating oil in a stir fry pan over medium heat. Add in the veggies and saute for 3-5 minutes until crisp tender.


Then, scramble in the eggs until cooked.



Top with a little cheese, if desired.


Serve warm.

  4. That's almost exactly what I had for lunch today! I used 2 egg yolks for a recipe earlier and saved back the egg whites--added broccoli, mozzarella, and mushrooms--yum!

  5. Oh this looks great! I wanted to try an egg dish this morning for breakfast since I am off today, but frozen waffles it was since my niece was born on Friday and its been hectic! I love how your ratio of veggies is quite large in this - nice and healthy.

  6. Yum! When I was first on my own, cooking breakfast on days off always consisted of whatever veggies were in the fridge covered in scrambled eggs. Thanks for posting!

  8. I think what I love most about veggie scrambles is that you can eat them for every meal of the day. Breakfast, lunch, dinner...always a good time for a scramble.

  11. We made this over the weekend and it was yummy! I tripled it for our family of 5 and, as we wanted it a little more eggy, added four extra eggs. :)
