Before we moved away from the cherry capitol of the world, we gave the traditional cherry pancakes a try!
I don't know why we waited so long because these were wonderful. We used sweet cherries, but I bet tart cherries would be wonderful too!
Cherry Pancakes - Finding Joy in My Kitchen
{Print Recipe}
1 egg
1/4 C sugar or honey
1/6 C applesauce
1/8 tsp. salt
2 C buttermilk
1 1/2 tsp. baking soda
2 C white whole wheat flour
1 C diced, pitted cherries
Begin by combining the dry ingredients in a large bowl.
Mix together the egg, applesauce, honey and buttermilk.
Then, add the wet ingredients to the dry ones.
Stir until just moist.
Gently stir in the diced cherries.
Scoop onto a griddle heated to 350.
Cook until little bubbles form; then flip!
Enjoy warm.
We served them with a sprinkle of cinnamon. YUM!

I've had strawberry pancakes and I've had blueberry pancakes, but I've never had cherry pancakes! Can you believe that? These look incredible!!

ReplyDeleteI've only used fresh in this recipe -- but I would think canned would work, if you drain the juice off them. I don't know how the pie-filling cherries would work in this recipe, but I think any "fresh" cherries, whether canned or fresh would work. Dried might even work too. Let me know if you try it!
