Since it was 87 here on Friday and 83 here today, why not break out the grill?!
In the midst of all our fall cooking and pumpkin goodness, we enjoyed a delightful meal of grilled BBQ chicken.
Cherry BBQ sauce, that is.
Yum.
Cherry BBQ Chicken - Finding Joy in My Kitchen

4 medium chicken breasts
1/2 C cherry BBQ sauce
Grill chicken over medium heat for approximately 7 minutes/side, or until internal temperature reaches 180 degrees.
Then, using a pasty brush, brush on the BBQ sauce to the top of each chicken breast.
Close the lid and cook about 1 minute, then flip the chicken breasts over to coat the other side.
Cook for 1-2 more minutes and then remove the chicken breasts from the grill.
Serve with brown rice and steamed broccoli.

Mmmm, looks yummy!! What a great idea! :) We hope to break out our grill tonight too, it's 81 here {which is a bummer for those running the Chicago marathon!}.

ReplyDeleteCherry BBQ, boy, that sounds good. I've done blueberry but never cherry. You have fresh or frozen cherries, do they really sell frozen cherries? I've never seen them, though, not sure I've ever looked! Thanks!
