Menu Plan–July 1

How can it possibly already be July?  I have a month left of summer before transitioning back, at least mentally, to teaching!  Eek.  Must make the most of these upcoming weeks… a little bathroom & bedroom painting and some well-needed R&R.  This last week, we enjoyed the first fruits from our garden:

We also hosted Frog Prince’s boss for dinner, as he was in town for a conference – & this cake was dessert.  Yep. It was good!

We grilled a bunch of brats this week, so we enjoyed many meals of traditional summer eats:

The heat is on this week – forecasted highs near 100 without factoring the humidity – so we’ll be eating treats and eats that keep us cool.

Sunday
Berry Banana Muffins {a great way to use up bananas, that’s not banana bread!}
Mushroom & Red Pepper Quesadillas {+ cheese & garlic}, Green Beans

Monday
Raspberry Oatmeal
Baked Veggie Sandwiches {make in toaster oven}, Quick Marinara, sweet potatoes
Brownies & Strawberries {make brownies in toaster oven}

Tuesday
Blueberry Cinnamon Rolls {bake in toaster oven}
Stovetop Broccoli Beef {new}, brown rice
Orange Creamsicles {new}

Wednesday {Happy 4th of July!}
Berry Crumble
Wild Rice Brats, Buns, Pickles, Grilled Potato & Dill Salad, Crockpot Baked Beans
Lemon Berry Trifle

Thursday
Light Hawaiian Banana Bread French Toast {new}
Smokehouse Maple Chicken Fajitas, grilled potato fries
Cherry Rhubarb Slab Pie {new, inspired by, in toaster oven}

Friday
Granola, Yogurt & Fresh Fruit
Crockpot Maple Apple Pork, Potatoes
Vanilla Ice Cream

Saturday
TBD
Grilled Pizza {perfect way to enjoy pizza in the heat of summer!}

What are you doing for the 4th?  Or, for those of you Canadians, what did you do to celebrate today?
