Ingredient Spotlight: Cottage Cheese/Ricotta Cheese

Today’s Ingredient Spotlight features yummy cheeses – cottage or ricotta.

We most often use these cheeses in Italian dishes, how about you?

Here are some of our favorite ways to use cottage cheese:

Crockpot Ziti – A fantastic meal made by your crockpot in 4 hours!  Love, love, love this one, especially for busy weekends.  Get the recipe here.

Savory Vegetable Tartlets -  This is a newer recipe for us, and a true favorite.  It’s an elegant appetizer, but also works for a Friday night.  Get the recipe here.

Make-Ahead Spinach & Pasta Bake – This make-ahead dinner is delicious.  It’s filled with yummy veggies and you can simply put dinner in the oven 45 minutes and you have a fantastic ziti.  Get the recipe here

Garden Vegetable Lasagna – This is a true summer lasagna as there are 9 different veggies in this lasagna, and the noodles are zucchini!  Completely GF, yet filling enough to satisfy your meat-lovers too.  Get the recipe here.

We also have a favorite Cheesy Lasagna that is our go-to lasagna recipe!  You can get that recipe here.

And, some of our favorite ricotta cheese recipes:

Garden Veggie Ricotta Pizza – Last summer we tried using ricotta on pizza!  Oh, my!  This pizza is a new favorite.  Get the recipe here

Three Cheese Ziti – This recipe comes from one of my dearest friends.  She gave me the recipe for my wedding shower and it’s our favorite ziti.  Makes a great gift for new moms too.  Get the recipe here

Lemon Ricotta Pancakes – Using lemon curd topping, these ricotta pancakes are great for spring.  I love the added protein from the ricotta too.  Get the recipe here.

Cheese-Crusted Lasagna Soup – Here’s the scoop with this recipe, it tastes just like lasagna with nearly none of the work!  Delicious, delicious.  Get the recipe here

I can’t wait to see how you use ricotta cheese or cottage cheese.  Link up your recipes below.  Don’t forget to join Tiffany next week with recipes featuring coffee.
