Welcome to September and Labor Day Weekend! This last week was really energizing and helped me get ready for the start of the school year.
I had the chance to lead some faculty professional development that focused on using groups in the classroom, suggested something new for our freshman welcome (which turned out to be a huge success) and got a technology tour of our new SCALE-UP classroom!
Although it was tiring, and busy, I am ready for the start of another school year after last week. Tuesday marks the beginning of year 4. I can’t believe I’ve been a college professor that long already!
We tried a few new meals last week, and they were delicious. The crockpot chicken taco bowls were tasty, but the desserts from last week (above photos) were even better: Mini Doughnut Ice Cream and Cheesecake Stuffed Chocolate Chip Bars.
Sunday
Leftovers Crockpot Breakfast Casserole, OJ and fresh berries
Grilling – Pork Burgers with Hamburger Buns, Sautéed Mushrooms & Onions, Grilled Vegetables, Corn, Sweet Pickles & Dill Pickles, Cherry Pie {new} and Vanilla Ice Cream
To do: Make lunches! Thaw steak overnight in the fridge.
Monday
Leftover Whole Wheat Buttermilk Waffles {freezer}
Steak Bomb Sandwiches {new}, oven fries
To do: Take out ground beef/turkey mixture from freezer.
Tuesday – First Day of School!
Granola & Blueberries
One Pot Cheeseburger Pasta {new}, Sautéed Zucchini and Mushrooms
To do: Nothing.
Wednesday
Leftover Whole Wheat Buttermilk Waffles {freezer}
Roasted Tomato BLTs, Corn on the Cob
To do: Nothing!
Thursday
Granola & Blueberries
Easy Stuffed Crust Pizza topped with Garden Veggies (Zucchini, Tomatoes and Kale)
To do: Nothing!
Friday
Summer Squash Oat Muffins with Cherry Butter {freezer}
Pasta with Roasted Tomatoes & Parmesan {new}
To do: Prep bagels, thaw sausage or chicken
Saturday
Bagels – Cinnamon Raisin {new} & Blueberry {new}
Italian Sausage Casserole {new} or Monterrey Chicken Grilled Cheese {new}
