Yesterday was so beautiful outside! Perhaps, spring is really here? It was nearly 60 degrees, and you could smell spring in the air.
That beautiful day was topped off by celebrating my grandma, who turned 95 on Friday. Such good times with family and good food. Made the Spartan loss a little easier to take. That, and the fact that Michigan lost too…. that helped.
Our recipe highlights from last week were the roasted asparagus and unstuffed pepper casserole. Yum. These have been family favorites for a while, and they were a hit here last week.

Ham & Cheese Sandwiches on Whole Wheat Rolls, Roasted Veggies

Chicken, Mushroom & Brown Rice Bake
To do: Nothing

Leftovers
To do: Thaw turkey, chop veggies
Friday
Roasted Veggie & Turkey Sandwiches
To do: Thaw sandwich bread & roast veggies
Saturday
Skillet Chicken Rigatoni, Steamed Veggies’
To do: Make granola, granola bars & ice cream
