What a weekend! We enjoyed celebrating Mother’s Day with family yesterday and I’m having a hard time believing that it’s already Monday morning!
Last week, our recipe favorites went to our Sweet & Sour Chicken recipe. I tossed in 3 diced bell peppers and 1 can of pineapple chunks … yum-o. I also “shake-n-bake” prepped the chicken by shaking them in cornstarch in the bag rather than individually dunking them in the mixture. So much easier.
We also roasted a big pan of veggies (broccoli, mushrooms, zucchini, tomatoes, Brussels sprouts, bell peppers) and made roasted veggie mac & cheese. I am looking forward to leftovers in my lunch today.

To do: Thaw chicken, or pork roast
Saturday
Option 1: Slow Cooker Parmesan Honey Pot Roast {new}, Crockpot Mashed Potatoes {new} & Boiled Carrots
Option 2: Pretzel Crusted Chicken with Beer Cheese Sauce {new}
To do: Make French Bread
