Menu Plan–October 14

This last week was such a blast – minus the 9.5 hours of exam grading I did yesterday.

But, that doesn’t overshadow the fun I had all week with my students, as well as on Friday when my mom came over to help Frog Prince and I finish up painting {imagine before: dark brown woodwork, tan walls, a dark vanity} our guest room & bathroom.

We had such fun painting – and I got to make our favorite soup in the crockpot for lunch, which we paired with bread machine French Bread

The recipe highlight of the week goes to the Baked Sweet & Sour Chicken.  We’ve made this many times before, but this week I tossed in 3 diced bell peppers & used crushed pineapple + pineapple juice in the sauce.  Wowee! 


Also, if you missed it – over the weekend I shared 25 fall recipes for sweet potatoes.  Did you know, they are healthier & cheaper than using pumpkin?  Your eaters will never know the difference. 

This week, we’re aiming to eat:

Waffles of Insane Greatness {make a double batch}, fruit
French Bread Pizza
Broccoli & Shells with Italian Sausage {new}
Pumpkin Sweet Potato Bars {new}

To do: Thaw chicken & spaghetti sauce.

Apple Cinnamon Baked Oatmeal {freezer}
Crockpot Chicken Parmesan, green beans

To do: Thaw chicken, dice peppers

Waffles {freezer} and applesauce
Grilled Balsamic Garlic-Crusted Chicken with Wild Rice Pepper Salad

To do: peel & slice potatoes, thaw bacon, make dessert

Granola & Blueberries
Loaded Baked Potato Soup {make in crockpot}
Dessert for Bible Study: Pumpkin Sweet Potato Brownies {new}

To do: Thaw Italian turkey sausages for risotto

Omelet Breakfast Sandwiches {freezer}, and applesauce
Sweet Potato Risotto, steamed veggies

To do: Nothing!

Caramel Apple Granola
Clean out the fridge, pizza

To do: Decide on breakfast & dinner.

Apple Cider Donut Holes or Easy Apple Danishes

To do: Prep snacks for the week & a dish for Sunday. 

Spiced Country Applesauce
Apple Chips
Pumpkin FroYo {new}
