Menu Plan–March 8

Spring is in the air!  We took our little one out for several walks this weekend, and the fresh air was wonderfully refreshing.  Pining for spring to really be here, I’m taking the opportunity to make some of our spring menu items that we love.  One oldie I pulled out this weekend was berry sauce. 

We used it on top of our waffles.  Yum-o.  So easy to make, and just the hint of spring I needed.  The other menu item this week that shouts spring to me is these yummy orange zest muffins.  Citrus = spring. 

The menu highlight from last week goes out to our Sweet Potato Chili and Corn Bread.  If it is still chilly where you are, or even if it’s not, this crockpot recipe would be a great addition to your weekly menu!   

Here’s our eats for the week:

Sunday
Whole Wheat Buttermilk Waffles with Berry Sauce
Spinach and Mushroom Calzones, Mixed Veggies
To do: Bake muffins

Monday
Orange Zest Cranberry Muffins {freezer}
Italian Pork Chops, Crockpot Baked Potatoes, Green Beans and Bell Peppers
To do: Start crockpot of potatoes at lunch time (4 hours on high; make extra), make baked oatmeal while the oven is hot

Tuesday
Berry Baked Oatmeal
Baked Potato Bar (Broccoli, Cheese, BBQ Chicken, Peppers, Mushrooms, etc.), Corn
Life Group Treat: Cheese bread {new}
To do: Start bread ~2pm

Wednesday
Leftover Berry Baked Oatmeal
Italian Sausage and Tortellini Soup, Whole Wheat Dinner Rolls {or, grilling?, TBD}
To do: NOTHING!

Thursday
Granola and dried cherries
Sweet Potato Risotto, steamed veggies
To do: Take out risotto from freezer to thaw, thaw chicken

Friday
Freezer Breakfast Burritos {new}
Rotisserie Chicken in the Crockpot, Sweet Potatoes
To do: Make broth

Saturday
Whole Wheat Buttermilk Waffles
Chicken Noodle Soup with Homemade Noodles
To do: Make ice cream, thaw chicken for fajitas
