Lucy made these strawberry-rhubarb muffins, and when my mom brought fresh-from-the-garden rhubarb on her recent visit, we had to give these a try!
Strawberry Rhubarb Muffins - From Lucy
1 recipe, no oil muffins
1 C strawberries, quartered
1 C rhubarb, sliced
Mix together the no-oil muffin base, and then stir in the strawberries and rhubarb slices. Pour into muffin tins (12 mini, or 6 jumbo) and bake for 18-22 minutes, or until muffins are done.
